Rachel's Plan Bee Our Skin and The Gut Connection

This is a topic that I have wanted to talk about for a long time. And honestly, my son's gut health and skin issues so many years ago are what led me down the never ending path of making all of his food and creating all of his skin care. And those experiences along with my experiences as a healthcare professional eventually led to Rachel's Plan Bee.

Over the next few months, I will be sharing information on the skin/gut connection and bits and pieces of our personal journey that not only helped heal my son's gut but also improved our family's overall health and approach to diet and skin care.

My biggest takeaway on this journey that I hope will help you on your own path to better health and skin is that there is no right or wrong way to do this – all of us are different. And even when we finally think that we have it all figured out, something happens to remind us that there is still so much more to learn. I can't wait to share more with you this summer!

This holiday weekend is all about honoring those that have died while serving our country. Hugs to all of our friends and family whose loved ones paid the ultimate price for the freedoms that we enjoy today – we thank you and appreciate you.

LEMON BERRY "CHEESECAKE"
(VEGAN, GLUTEN-FREE, LOW REFINED SUGAR)

 

I am so excited to share my latest food obsession -- a delicious cashew-based "cheesecake". I discovered early on how yummy homemade cashew milk is compared to some of the other nut milk options on the market, but I had never attempted to make a cashew-based dessert!

I stumbled on @datesandavocados Instagram feed one day and have never looked back. She generously shares most of her recipes in her posts and it was there that I got the inspiration to make my own version of her yummy dessert.

I made the following substitutions to her recipe:

  • used walnuts instead of hazelnuts in the crust recipe
  • chose to use a mix of berries instead of just blueberries
  • blended in a few berries to part of the "cheese" mixture to make to make the swirl

I love this "cheesecake" not only because my son can safely enjoy it with his diet restrictions, but also because it's easy to make and does not involve an oven. This is the perfect dessert for the hot summer that is coming soon! I hope you enjoy making it as much as I have these past several months. It's sooooo good!
