Sometimes all we need is a little chocolate! (and a recipe)

I posted this to Instagram a few days ago, but wanted to share this simple recipe on the blog. When you need a quick chocolate fix, these will do the trick! And as an added bonus, you can easily make these dairy-free (if that's your thing). Enjoy -- they are addictive!

Easy Chocolate Candy with Nuts

4 parts chocolate chips (we use Enjoy Life Foods chips that are dairy-free)
1 part virgin coconut oil
handful of raw nuts of your choice
a dash of sea salt (totally optional)
1 part patience (also totally optional) 

Gently melt chocolate chips in a double boiler or microwave (I melt at 20 percent power for 2-3 minutes).  Mix in coconut oil until well combined with melted chocolate.  Place nuts in little piles on a cookie sheet covered with parchment paper.  Sprinkle each pile with a little sea salt.  Spoon melted chocolate carefully over nuts.  When all nuts are covered, let sit at room temperature until chocolate is set.  If you are impatient like me, place cookie sheet in freezer for 10 minutes to harden chocolate. 

What you do after this point is your choice!  I devour immediately and never look back.  :)

Enjoy and don't be surprised if you find yourself sneaking into the kitchen to make a few of these several times a week. Store bought chocolates will never look the same again!
